My good friend Nadene (the one who supported me to get into wholefoods actually!) has become quite well known in our neck of the woods.
The reason?
Bliss balls.
She makes the b-e-s-t bliss balls.
Feast your eyes and your tummy on this Christmas variation!
Nadene says she really only makes these once a year at Christmas time for a special treat. ‘Cos once you start to eat these babies, it’s hard to stop.
The flavour combo is insane.

Ingredients
- 3 ½ cups almond meal
- 3 ½ cups rolled oats pulse in food processor to be fine in texture
- ½ cup cacao powder
- orange rind grated
- ¾ cup pistachios chopped salted
- 1 cup dark chocolate chopped
- ¼ cup dried cranberries chopped, or use dried sour cherries
- 500 g rice malt syrup
- desiccated coconut for rolling
Instructions
- Combine all ingredients in a large bowl and stir well.
- Roll mixture into balls and roll in coconut.
- Refrigerate and indulge.

Variations
- Peppermint Bliss Balls (Laini’s all-time fave!)
Same as above for almond meal, oats, cacao powder and rice malt syrup. Add peppermint dark choc (or just plain ol’ dark choc will work too), and edible peppermint essential oil to taste (around 4 drops). Roll in coconut and refrigerate.
