JFC: Jordan’s Fried Chicken

Sometimes you just have to claim it. It’s that good.

This JFC chicken is awesome on a burger with a quick home-made coleslaw, or with mash and gravy and veg, or on a salad with some avo and mayo.

Just eat it.

I promise you, if it’s good enough for the 12 teenage boys who devoured it at our house and begged for more, or our bestie who had waaaaay too much for dinner, then leftovers again for breakfast the next day, then you know it’s good.

TIP 1: Make triple the seasoning you need and keep it for next time so it’s easy-peasy.

TIP 2: Have leftover seasoning that you’ve had chicken in? You can still save it for next time, just pop it in the freezer! Don’t forget to label it so you don’t question what it is in 6 months time 😉

JFC: Jordan Fried Chicken

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Ingredients

  • 500 g Chicken of preference breast/tenders/legs
  • 2 eggs free range / organic
  • Oil for frying extra virgin olive oil / deodorised coconut oil is best

JFC Seasoning

  • 1 Tbspn paprika
  • 2 tspn onion salt
  • 1 tspn chili powder
  • 1 tspn black pepper
  • 0.5 tspn celery salt
  • 0.5 tspn dried sage
  • 0.5 tspn garlic powder
  • 0.5 tspn ground allspice
  • 0.5 tspn dried oregano
  • 0.5 tspn dried basil
  • 0.5 tspn dried marjoram
  • 1.5 cups flour of choice wholegrain or white organic spelt flour / buckwheat flour for GF
  • 1 Tbspn sugar coconut / rapadura
  • 1 Tbspn salt sea / Himalayan / Murray River / Pink Lake
  • dulse flakes optional booster

Instructions

  • 1. Make the seasoning by mixing all the seasoning ingredients together
  • 2. Add seasoning to flat plate
  • 3. Semi whisk egg/s and add to shallow bowl
  • 4. Dip raw chicken in egg, then in seasoning. Don't be afraid to really get in there with the seasoning. Press it in!
  • 5. If you're super keen, you can try double coating with another round of egg and seasoning. We don't usually bother.
  • 6. Heat pan, then add enough oil so it's about half-way up the chicken pieces you'll soon be adding.
  • 7. When the oil is hot enough so that when the chicken touches it, it sizzles, you're ready to add the chicken in. Don't overcrowd, and once the chicken is in, don't touch it until it's golden brown and ready to flip.
  • 8. Flip and then cook until the other side is also golden brown.
  • 9. Pop onto a plate lined with paper towel to absorb excess oil.
  • 10. Devour!
