We LOVE our kid-friendly recipes, and you’ll find no shortage of them on the blog. But this is one recipe just for the grown-ups this summer! The most refreshing summer cocktail in an icy cool package – and the fact it can be made in advance makes it an absolute winner for busy lives.

Ingredients
- 300 g coconut water
- 60 g rice malt syrup
- Small handful mint
- 55 g white rum
- 50 g lime juice
- 6 thinly sliced lime pieces
Instructions
Thermomix
- Place coconut water, syrup, mint, rum and lime juice into TC bowl, blend for 30 seconds, speed 9.
- Pour evenly into 6 silicone ice cream moulds (with sticks inserted) and top with a lime piece, ensuring to submerge it just under the liquid.
- Freeze for a minimum 4 hours before removing from mould to serve.
Conventional
- Mix together coconut water, syrup, mint leaves, rum and lime juice.
- Pour evenly into 6 silicone ice cream moulds (with sticks inserted) and top with a lime piece, ensuring to submerge it just under the liquid.
- Freeze for a minimum 4 hours before removing from mould to serve.
Notes
Make a batch of these treats to keep on hand to surprise your friends on a hot evening, or batch up for an aperitivo for a Christmas dinner party.
