Minty & Refreshing Mojito Ice Pops!

 

We LOVE our kid-friendly recipes, and you’ll find no shortage of them on the blog. But this is one recipe just for the grown-ups this summer! The most refreshing summer cocktail in an icy cool package – and the fact it can be made in advance makes it an absolute winner for busy lives.

Mojito Ice Pops Sugar Free Summer Treat

Mojito Ice Pops

Prep Time: 5 minutes
Freezing Time: 4 hours
Total Time: 4 hours 5 minutes
Servings: 6 popsicles

Ingredients

Thermomix

  • Place coconut water, syrup, mint, rum and lime juice into TC bowl, blend for 30 seconds, speed 9.
  • Pour evenly into 6 silicone ice cream moulds (with sticks inserted) and top with a lime piece, ensuring to submerge it just under the liquid.
  • Freeze for a minimum 4 hours before removing from mould to serve.

Conventional

  • Mix together coconut water, syrup, mint leaves, rum and lime juice.
  • Pour evenly into 6 silicone ice cream moulds (with sticks inserted) and top with a lime piece, ensuring to submerge it just under the liquid.
  • Freeze for a minimum 4 hours before removing from mould to serve.

Notes

It helps to put the ice cream moulds onto a tray before filling with liquid – this makes it easier to carry to the freezer
