I’ve only recently become a coleslaw fan! Unless it’s freshly made, I find it’s just a big slop of mushy vegetable oil-covered remnants of what might be veggies. Ha!

Made fresh at home, far out – it’s a game changer.

You’ll want a mandolin for this one.

I highly recommend Gevity Mayo. You can buy it in many health food stores and lots of places online. It’s definitely more expensive than regular mayo, but I buy a jar every week because I save money elsewhere in my food shopping, so I can afford to splurge on a quality product like this. We use it for sushi, wraps for school lunches, dollop it on the side of our lunch buddha/poke bowls, and yes… to make this coleslaw. This mayo has no vegetable oil, it’s made with high quality olive oil and 2 tablespoons gives you 1 serve of gut loving bone broth – winning!

Simple Coleslaw

Prep Time: 10 minutes

Equipment

  • 1 Mandolin Makes the recipe so fast and more appealing because each piece is uniform in size and very thin for easy eating

Ingredients

  • Purple cabbage or an amount you feel gives a good ratio in the recipe
  • 1 large Carrot
  • 1 Green apple
  • cup Mayo Gevity Body Glue
  • ½ tspn Dijon mustard
  • 1 tspn Apple cider vinegar
  • 1 pinch Salt or to taste

Instructions

  • Simple: Just use your mandolin to shred the veg and fruit, then mix with your other ingredients. Voila!
